Why the number of reviews matters
When someone searches for a shop or service nearby, Google shows a short list with star ratings and review counts. People read those reviews before choosing, and a listing with many recent reviews looks active and trustworthy next to one with a handful from years ago.

Reply to every review
Google lets owners reply to reviews, and the replies are public. Customers read them: a thoughtful reply to a complaint often does more for trust than another five-star review. Replying also shows people who are deciding whether to review you that someone actually reads them.
What not to do
Google's policy forbids offering incentives such as payment, discounts or free goods in exchange for a review, or for changing or removing a negative one. Reviews written by staff, family or paid services also break the rules. Google removes such reviews and can restrict the listing, which costs far more than the reviews were worth.
